pumpkin, caramel, & toffee crunch parfaits

I forgot to post this after Thanksgiving – oopsie! This is a perfect dessert if you’ve got leftover pumpkin pie –  you simply layer pumpkin pie filling, whipped cream, caramel sauce & english toffee pieces. That’s it – so easy, and so delicious.

easy, but oh so delicious, cranberry sauce

1 bag cranberries, organic preferable
2 large navel oranges, zest & juice (approximately 1 cup of juice)
3/4 cup to 1 cup sugar, depending on your ‘sweet’ threshold!
2 apples, diced

Combine zest, freshly squeezed orange juice and sugar and heat over medium heat till boiling. Bring down to a simmer and add the two chopped apples and cranberries. Simmer for 10 – 15 minutes longer until cranberries have popped and mixture has thickened slightly. Remove from heat and let cool – it will thicken as it cools.
