nicki’s chili

Here is a recipe from one of my best friends, Nicki.  Sounds perfect for a cold winter night!

Nicki’s White Chicken Chili

2 lbs chicken cut into bite-sized cubes 
1-2 tsp olive oil
1 green bell pepper, chopped
1 white onion, chopped
1 jalapeno finely chopped- remove most seeds (remove all seeds if you don’t like it super spicy)
1 small can diced roasted green chilies
1 can white beans drained
1 14oz can stewed tomatoes
1/4 cup masa flour
2 cups water
1 tsp cayenne pepper
Chili seasoning

Toppings: mozzarella cheese, cilantro, sour cream, tortilla strips, raw onion

Brown chicken with olive oil, onion, bell pepper, and jalapeno.  Add water, masa flour, can of green chilis, can of tomatoes, and chili seasoning- bring to a boil and then lower heat to a simmer and cover with lid for 15 minutes.  Uncover and add white beans, and cayenne pepper to taste.  Cook for about another 15 mins uncovered (until thickens to your desired consistency).  Serve over brown rice with corn bread on the side.

Happy Halloween!!

savor the central coast

I know this is a tad bit delayed, but I figure it’s better late than never, and I couldn’t not show you what fun we had at the Savor the Central Coast Food & Wine Festival!

I’m not the biggest festival fan… usually I find them massively crowded with mediocre offerings so I try to stay faaaaar away.  Savor the Central Coast is different though… classier, with really amazing wineries & restaurants.  This is definitely a must-do each year.

With so many different wines and food samplings to choose from it would have been impossible to try them all!

There were some standouts though… like the beet tartare shown above.

This Rubicon cabernet was incredible, plus I love the bottle.

I found a Schramsberg bubbly… awesome!

These happy folks were handing out a delicious lamb tagine drizzled with meyer lemon olive oil.

Autumn and I enjoyed some Rose…

Safeway pizza… I didn’t even know they sold fresh dough!  And I love any pizza with arugula on top.There even was a beer garden for those who wanted a break from the wine tasting… not me though, I really enjoyed being able to try so many new wines, and now having a couple new wineries to add to our list next time.

I can’t wait to come back next year!  Who wants to join?!
