detox – day 7 – final day!

But the good news is that today is day 7 of detox, and that means I am finito after dinner tonight!  Wahooooooooooooooooooooooo!

I didn’t have time to make my secret spinach smoothie, so breakfast was at the office… greek yogurt mixed with a little stevia and organic raspberries.

lunch was split pea soup from soup co (same as day 2, I forgot to snap a pic!),

and then an apple & string cheese for a snack later

I’m seriously so bored with veggie burgers… but it was exciting to roast some fennel for dinner. I’ve never cooked fennel before, it’s really delicious! Cut the tops of the bulbs, slice each bulb in half lengthwise, and then slice each half into strips. Toss in olive oil with salt and pepper, then spread out onto a baking sheet and bake at 400 degrees for an hour, flipping the pieces around a bit after half an hour.

Served with brown rice, corn, a veggie burger with caramelized onions, and butternut squash… not bad.  Actually, I think I’m veggied out.  D & both agreed we weren’t dying for the butternut squash so it is now in the freezer and will become soup at a later date.  A couple bites of corn and half a veggie burger later I was done… full from snacking on fennel as it cooked?  Fed-up? I don’t know, but once those plates were gone from our laps detox was officially over!

And what better way to celebrate than a glass of bubbles while watching an old Barefoot Contessa episode?!

detox – day 6

Sunday Not-so-Funday.  It is Day 6 and I have to admit, I’m beginning to feel a bit bored with the food options… there’s only so much creativity I can muster with these food choices!  But the end is in sight!  Only one more day after today… hurray!

Another sneaky spinach smoothie for breakfast with a cup of decaf PG Tips tea w/ fat-free half and half… even though D saw me putting the spinach in the blender, he was impressed with the fact you can’t taste it at all!

leftover lentil soup – I was actually really full from the hummus & veggies, so I only had a couple of spoonfuls.  D had the leftover pepper from last night’s dinner – it smelt as good reheated as it did the first time!

 we then went on a great run down by Fort Mason and along Crissey Field…

And afterwards we hit up the Marina Dateway, oops I mean Safeway, to stock up on some fun goodies in preparation of my parents coming up to visit this week.  The New York Cheddar Kettle Chips are calling my name from the cupboard, but I am adamantly ignoring them!  I think the ingredients for my dad’s version of a Sea Breeze – Kettle One Vodka, Grapefruit Juice and Guava Juice – might be calling D’s name right now from our fridge & freezer.  Is it Tuesday night yet?!

Oh yes, dinner – forgive my momentary distraction – green beans cooked with chili, garlic, shallot & onion, corn, brown rice w/ a sprinkling of soy sauce, and a TJs freekah burger w/ caramelized onions.

I woke up to a late start today, and didn’t have time to make my regular morning smoothie before heading off to Bar Method… growl.

And, instead of meeting D at the Ferry B for lunch where we normally hit up Taylor’s (I refuse to call it Gott’s) or grab sandis from Acme Bread, we instead had to hit up the salad bar at Bristol Farms… double growl.  Bristol Farms is located in the food court area of the Bloomies shopping center – just seconds away from Out the Door and chicken buns.  Talk about torture.  But my salad ended up being very tasty – spinach, romaine, red onion, brocolli, strawberries (the best part), olives, edamame, tomatoes, chickpeas, & cucumber tossed in a white balsamic vinaigrette.  I was very pleasantly surprised.

 Followed by a handful of sneaky cheating cashews… yum.

I know this has nothing to do with detox, but I just love the window displays near Union Square that support San Francisco Ballet – I’m co-chairing ENCORE!’s Opening Night Gala so it’s near and dear to my heart!  Here is the window at Williams Sonoma – how incredible is this tutu?

So, D had the idea to make stuffed peppers – genius!  Totally okay for detox! I took the leftover quinoa from the last two nights (which was cooked w/ onion and garlic) and mixed in chopped spinach, mint, cherry tomatoes, peppers, and light mozzarella.  Then I took the tops off the peppers, cleaned out the insides by removing the seeds & ribs, and stuffed with the quinoa mixture.

I then popped them in the oven, baked at 350 degrees for thirty minutes, topped with some more cheese (not low-fat, cheating… but it wasn’t much, I promise), baked for 5 minutes longer and then broiled until they started bubbling on top.  I’ll definitely be making this one again… they came out smelling so good!

 Paired with a veggie burger topped with caramelized onions, delicious.

 And some grapes for desert… perfecto!  They were almost like having a glass of wine.   Almost.

So I planned a “surprise” for our Friday dinner and have been talking about it all week to D… I must say, he was pretty curious by the time I arrived home w/ my secret package.

Curious yet?  It’s really really exciting…

Okay, okay… I’ll tell you!  Plant Burgers for dinner!  With oven baked sweet potato fries (allowed!  just no regular potatoes… or at least that’s how I read the rules), sauteed spinach & leftover quinoa from last night.

I hope that wasn’t a let down.  But when you’re on your fourth day of detoxing I promise you, you will be so excited about things like this!  Plant Burgers really are delicious – they’re made w/ beets so they’re this bright pink color, and they also have lentils, mushrooms, cashews, & bulgar wheat mixed in.  Topped with some melted light cheese, caramelized onions & a tomato chutney from Plant Cafe – well, it made my night to not be grabbing another veggie burger from the freezer.  If you don’t live in SF and want to experience the fabulous Plant Burger I found a recipe online which looks pretty close to the real thing- check it out!
