you say potato

Potatoes are always a crowd pleaser.  Here are two easy recipes…

Mashed Potatoes
(serves 8)

two pounds of yukon gold potatoes
2-3 tablespoons butter
3/4 cup half & half (or cream, or milk, or fat free half & half – whatever you have!)
freshly ground salt & pepper 

Use a potato peeler and peel away the skin of all your potatoes.  Doing this under a running tap will make the process easier. If the potatoes are on the larger size cut in half as they will cook faster if they are in smaller pieces. Bring a large pot of water to a boil and boil until you can easily pierce through each potato with a knife. They should not be hard in the center.

Drain away all water and start mashing with a potato masher.  Whilst mashing, add butter and half & half.  Continue mashing and add salt & pepper.  If I were to guess an amount I would say 2 teaspoons of each, but really this is up to you.  At this point taste your potatoes and see if you need anything more of anything.  Sometimes I will add a bit more half & half to make them creamier.

Oven Roasted Potatoes
(serves four)

1 pound of yukon gold potatoes
2 yellow onions
2 tablespoons olive oil
salt & pepper

Preheat oven to 450 degrees.  Chop potatoes into small pieces.  Cut onions in half, remove skin, and slice lengthwise into half rings.   Toss and potatoes together in a large bowl with olive oil, 1 teaspoon each of salt & pepper and spread out over a baking sheet.  Bake for 30 – 40 minutes until crispy and serve hot out of the oven.

Note:  You can also use cold leftover baked potatoes for these – I did this recently for ‘breakfast potatoes’ (see photo above) and they were incredible… a great way to use up any leftovers!

twilight

I need to preface this post with an acknowledgment:

Yes, I know that this party is beyond nerdy.

I threw a little Twilight/New Moon shindig the other night for my fellow Twilight lovers, Autumn, Mary, Sara & Tiffany since we were having Edward & Jacob withdrawals and the Eclipse DVD doesn’t come out till December. Don’t even get me started on Breaking Dawn – the first and second parts aren’t released until November 2011 & 2012!  We just needed a little fix!

So of course I had to do some “research” online so I could see what fun Twilight ideas other bloggers had come up with, and I was not disappointed when I stumbled upon the Hostess with the Mostess Twilight Party page.  She has created the most amazing movie quotes designs for Twilight, New Moon & Eclipse that you can download onto your computer.  Then you just send them remotely to Kinkos using their online printing feature and then pick up at your local store all ready to go!  I popped them in some black frames I had, and then continued the black, white & red book cover theme throughout my apartment. To finish the look I scattered tea lights all around my living room to create a vampire-ish “mood”.

She also had really great drinks labels that you can download – I glued them around some wine bottles and I love how they turned out!  And I really like how the roses look with the white lilies…

I served “Italiano” for everyone – but forgot to take photos (of course) once I actually put the food out…  rigatoni with chicken sausage & caramelized onions, garlic bread, & a simple arugula salad with a lemon vinaigrette.

Yes, that is an Edward doll – courtesy of Autumn.  she actually had not one, but two different Edward dolls, and a Twilight puzzle – don’t say I didn’t warn you about this party being nerdy!!

Ooh these are really great… Autumn gave me these awesome fang ice cube trays – I filled them first with water for the teeth, and then once that was frozen I topped them off with POM for gums – pretty creepy.

And then Mary made the most incredible red velvet cupcakes with fang marks, marshmallow ghosts & licorice bats.  It was Autumn’s birthday, hence the candles.

spicy black & white chili

Rain, rain, go away.  Come again another day!

I actually don’t mind the rain – there’s something quite calming about hearing it pitter patter on the window, and it gives you the perfect excuse to cozy up inside with a good book or perhaps watch a movie cuddled up on the couch.  Or you could make chili, which is what I spent this past Sunday rainy afternoon doing.

Here’s the recipe – I adapted it from one I found in Bon Appétit.  I’m not sure if it was their combination of spices, or my addition of the pasillo pepper but the heat level was definitely much too spicy for my taste… most of my adjustments happened as a result of me trying to control the heat level back to normal levels!  But the end result was great – especially with a healthy dollop of creamy greek yogurt and a sprinkling of sharp cheddar cheese.

1/4 cup olive oil
2 cups chopped onions
1.5 – 2 cups coarsely chopped sweet peppers (I used the small red, orange, yellow ones from TJs)
1 green pasillo pepper (I will only use half next time)
6 garlic cloves minced
2 tablespoons chili powder (1 tablespoon would be plenty)
2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
1 cup white wine
3 16 ounce cans black beans
2 16 ounce cans garbanzo beans
16 oz frozen corn
1 16 ounce can tomato sauce
5 16 ounce cans crushed tomatoes
32 oz chicken stock (use vegetable stock if you truly want this to be a vegetarian dish!)
 

1.  Heat oil in large pot over medium-high heat. 

2.  Add onions, sweet peppers, pasillo pepper and garlic and cook till soft, approximately 10 minutes. 

3.  Mix in chili powder, oregano, cumin, and cayenne and stir for approximately 2 minutes.  Deglaze the pot with white wine, scraping any bits on the bottom with a wooden spoon.

4.  Mix in beans, tomato sauce, crushed tomatoes, corn, and chicken stock.  Season to taste with salt and pepper.  

5.  Bring chili to boil, stirring occasionally. 

6.  Reduce heat to medium-low and simmer for approximately 15 minutes.


7.  Ladle chili into bowls.   Top with a spoonful of greek yogurt or sour cream and grated cheddar cheese.


Note: these pics were taken before I made the adjustments for spiciness… I added more beans, tomatoes, & stock afterwards, which is why the picture at the top looks somewhat different!  Essentially I increased the volume and made it more ‘soup-y’… it could easily serve 10-12 people now!  There is so much leftover chili in my freezer, but at least I know it won’t be too long before the next rainy day!

how to cook an artichoke

1. Take a large knife and cut approximately 3/4 of an inch off the top of the artichokes and also trim the stem.  You can leave up to 1 inch of the stem, depending on what your preference is.

2. Use your kitchen scissors and trim the remaining leaves by cutting the tips off.  Tear off any small leaves near the stem.

3.  Rinse your artichokes with cold water.

4.  Fill a large pot with water.  Add a sliced lemon and some peeled cloves of garlic.  Again this depends on your personal preference, but I like to use 2-3 cloves per artichoke.

5.  Add your artichokes and bring to a boil.  Once at a boil, turn down and simmer for 30 -40 minutes, or until you can pull the outside leaves easily away.

6.  Serve with a good store bought mayonnaise thinned down with the cooking water – as much or as little as you like!

fleet week

The Fleet Week Air Show is one of my favorite activities to do here in the city each October, and this year did not disappoint. Normally I go to the Saturday show, but we were over in Berkeley watching Cal beat UCLA (GO BEARS!) so we planned on watching the Sunday show instead.

D & I woke up ridiculously early, packed up our handy backpack chairs (nerdy, but so useful!) and headed down to Fort Mason to lay down some blankets and save some space for our friends who were meeting up with us later.  Well, at 10 am, we just a teensy bit premature as we were the only people there!  But not to worry, the sun was out and the fog was clearing, and we did end up with the best viewing spot on the field!  Soon enough the air was filled with fighter jets and prop planes showing us their tricks overhead.  And our picnic wasn’t half bad either!  The six Blue Angels finished up the show with an insanely awesome performance (see the video above).  I’m pretty sad that we have to wait a full year till we get to see them again.
